Wiring up a steamer over

We are switching out the ovens in a couple of our kitchens. Our original ovens have 30 amp breakers and the ovens plugged in from the back. These new ones need a 100 amp breakers. My question is could we just hard wire them in without a disconnect? Our electrical panel is in the kitchen and it is 27 feet from the oven and in site of it

I don't see an issue using the breaker as a disconnect.
