I have one 36" wide MDP and two 200amp panels to the right of it. Each has the required working space shifting the 36" for the MDF and 30" for the two panels. Conduit body was installed and extends past the allowable 6" from the front of the panel. The conduit body in question is between the two panels and out of the 30" space while working on either panel.
Would that meet code? Or is that still within the overall work space and as such not be acceptable?

Do you have a photo, or a sketch? Hard to visualize.

You need a minimum of 30" of width in front of each panel. If the panel is wider than 30" then you need the with of the panel.

Panels can share the 30" width if they're flush with each other on the front. As long as you have the 30" minimum the conduit body would be outside of the required working space width.
