That said I simply put a standard connector on the MC before I snake it down into the panel.

The NEC already has rules to prohibit what is shown in Augies picture it sounds more like someone in power in Austin likes pipe.
Hmmm.....they do some strange "OTHER" things down in Austin TX as well. I should probably schedule a visit to that jurisdiction.....but my plate is swamped so maybe in the fall.Here in Austin, local ordinance prohibits the install you are describing in commercial applications.
used to be around here, we'd put a 2' x2' box above the t bar
with two 2" emt's down into the panel... all the home runs
came into the box, and went unbroken down into the panel.
you'd put odd in the left pipe, and even in the right pipe...
and nobody had a cow about derating... not any more, you don't.
but it made a clean install below the ceiling, and as there were no
splices in the box, it was ok.
Just in response to the 4 mc per box in austin comments i just wanted to say that the ordinance has been gone since 2014 as a matter of fact almost all the odd ordinances are gone and were pretty close to a nec book match now

That still is common practice except of a pullbox we use trough and make Shure the Nipples are 2' do you don't gave to d rate . And looks just a clean
