On a three phase grounded delta service, does it matter which legs are hooked to an air conditioning compressor with a start and run capacitor?

Welcome to the forum.

In a 3 phase delta system the phase to phase voltage will be the same so it doesn't matter which phases are used if you are using phase to phase loads. The phase to ground voltage is what is different in a delta system. In a center tap 240/120 system the voltage from the high leg will be roughly 208 phase to ground, but phase to phase it would be 240 volts.

Be sure that any 2P breaker connected to the 'high-leg' is rated as a straight 240V, instead of having the normal 120/240 rating.
