Another issue that will come up with your plan: you can't run multiple branch circuits or feeders to a separate building (see 225.30) You will need to run a multiwire branch circuit or a feeder to the separate building. This will disqualify the ability to use the 120 volt 20 amp GFCI protected circuit buried at only 12 inches deep.

You could use RMC if you wanted to remain shallow though.

I would just pull THWN through your raceway instead of UF - it will pull much easier.
What is RMC ? I decided to run #6 Cu through 1 1/2 pvc and a 60 amp panel, which means I have to go deeper, 18 " to top of conduit. Thank you for your suggestions.

Rigid Metallic Conduit, the electrical equivalent of galvanized water pipe.
What a layman calls conduit is EMT, Electrical Metallic Tubing.

I have used the 12 " deep rule for customers quite a bit in the past. But it was just one circuit for a detached garage that met their needs and budget. I was going to run three such circuits this time, and I didn't realize that you can't do that. The inspector hadn't yet returned my call. Thank you for bringing to my attention that only one is permitted.
