Is it just me, or a lot of new products coming with less wire clearance? Things like disconnects, ATSs, lighting panels, ect.

I am not sure about disconnects, but it sure seems like equipment that is built elsewhere and has a panel that we bring our branch circuit conductors into is getting increasingly smaller. I just recently wired a pump skid that was rated at almost 600 amps that I had to run parallel 300 Kcmil conductors to and I had about 5" of clearance above the main breaker where I had to terminate into.

Increasingly smaller is the right observation IMO. In general IEC equipment has way less clearance, but it seems like North American equipment is taking this route.
