3 phase GFI

If I feed 120/208 to a piece of equipment that has a 3 phase motor and also take off one leg to neutral for a small circulator., will that trip the GFI?

Depends if the GFCI has a "load neutral" and if it does you must use it for the 120 volt load. If it does not have a "load neutral" you can not supply any line to neutral loads from it, or it will trip.

No, as long as the neutral current passes through the GFCI device, too. The line currents need not match.
