Can someone explain the logic behind not counting these AlumiConn connectors towards box fill requirements? Is it because they're not technically consider a "device"? I mean they do take some space, specially if you have a GFCI receptacles, or multiple circuits running through an outlet.

A gfci or dimmer is just 2 conductor fill like a 1 pole switch or standard receptacle. At a certain point your workmanship needs to speak for its self. Btw alumicons tend to be priced so they are just shy of rewire costs. Maybe a hybrid approach is best when selling a job. Redo the kitchen, dining, bedrooms that can be accessed from attic and basement but leave the few hard to get to wires like bath vanities that are in wall or dedicated circuits that won't have much fill in the box. This is usually more expensive than taking 2ft off the bottom of every wall less the kitchen, bath, and any other cabinetry just redoing it all.
