Can I run (3) separate 120v/1ph circuits in a conduit or do they need a separate conduit? If they are in the same conduit do I just need to derate the current carrying capacity of the conductors?
 
Yes, as long as you maintain proper sizing, as James mentioned, and appropriate derating, as you mentioned.

Yes, 3 circuits with separate neutrals would be 6 CCC's and a derating of 80%.
 
Short answer....combined in one conduit and derated to 80%

(In the event someone is playing "technical" the circuit size, wire size, type insulation, environment (wet vs dry) and if it was a multireceptale cord & plug load could effect the answer in 1% of the cases)
