I always see the above voltage on drawings but sometimes when I am reading something online or in an article etc. it refers to 240V. What is that and what is the correct way to refer to high voltage?

240 volts is a common residential single phase transformer delivery. The 208 volts is common from a 3 phase transformer delivery although their are exception. It just depends on the trany delivery the power.
