Can I install a 3phase metercan and set a Fusible disconnect outside a building and then feed a 3 Phase loadcenter (Main lugs) and then from 3 Phase loadcenter sub feed a 2P100 to a 125A (Main Lug) 1 Phase Loadcenter. Would this be Code Compliant. The wire sizes are 2-3/0 ( A,C Phase) 200A Fuses
1-1/0 (B-Phase) 150A Fuses
1-2/0 ( Neutral )

to be certain, you would need load calculations for your reduced neutral..and your MLO would need to be rated for the 240/120 delta service, but in general terms, what you describe is Code compliant.
(note your high;leg normally terminsates one way at the meter and differently at the panel (B phase)

I do have a Load calculation for this service. I was just wanting to make sure it would be code compliant.

Thank You

The correct (per IEEE and ANSI) description is 240/120V. Many people then add 3P4W to further show it really is 3 phase 4 wire and not a misprint.
