It's gotta be a run cap. I'm looking at a catalog; the run caps range from 5 to 50uf, while the start caps run from 36 to 105uf.

You think ? I was guessing a 'capacitor run' judging by the 8 MFD capacitor, It would create a 90 DEG out phase winding. Not sure if its run or start.
Permanent split capacitor motors only uses one cap and it stays in the circuit the whole time the motor is running, so it's like a running cap. It also means you can vary the speed of the motor. I don't think I'd worry about it in your case. Is the mixer really gonna care about a few hundred RPMs faster?
