If you a have (2) single poles toggle switches ganged together controlling different switch legs how many wires for each? I am thinking (3) plus a ground for both.

I think with the neutral requirement in each switch box, you will need 3 conductor cable for each.

Being that you bid commercial jobs we will assume a separate circuit for each switch. Two Hots, two switch legs, wire nut each home run neutral to each switch leg neutral,
w/MWBC you could have only one homerun neutral & two switch leg neutral. Grounds can be kept separate or all under one wire nut.

Depends on whether the switch supplies the fixture or is, as the OP stated, a switch leg with power coming from the fixture. Are both on the same circuit, or is it an MWBC at the fixture(s)?

If you're using EMT then the minimum needed could be three, HOT, SW LEG, SW LEG.
