I recently converted a motor from 480v. To 208v. I changed the taps on the motor everything is fine but it's OCP are 600 v. Fuses. Are these okay for the 208v

In changing the voltage connection, you have increased the current to more than double what it was, so most likely your fuses based on it being the current rating at 480V are too small for it now being the current rating at 208V.

But being rated for a maximum of 600V is irrelevant.

As long as they're sized for the new configuration's current, yes, higher-voltage fuses are okay.
