Ac breaker and wire size

AC unit is marked for to use a 50 amp breaker...actual compressor amps was 27......A #8 romex is only good for 40A...Would I need to change the wire to #6 or am I good?....

You should find on the nameplate of the AC the min circuit ampacity and follow that.

But I'm sure you are good with #8.

if it says to protect it at 50 amps, then you need to run wire rated for at least 50 amps and a 50 amp breaker.

Wire to the min, breaker to the max. If the minimum circuit ampacity was 27 amps and the max fuse or breaker was 50, then I'd run #10 and put it on a 50 amp breaker.
