Let's see here, a grease /fume Hood that is uncleanable and flammable... Brought to you by the makers of the Hindenburg.
Eta: I just now realized the second picture is of about a $10 Walmart box fan inside the grease Hood. Wow. Reminds me of the time the last major hurricane came through, the local Chinese place was the only restaurant open because they were cooking with gas... Never mind how that was even turned on without a functioning hood and fire suppression system... Maybe they had a box fan in the hood
What is the appliance, a toaster, or conveyer oven? The health dept. inspector will have issues w/ it as will a fire inspector & they will both be right.
Cant make out what the note says. Perhaps something like, "do not set heat setting above 3 or hood will catch on fire?" Or "please do not use stainless steel cleaner to clean the hood?"
The exhaust system would have be problematic, unless hooked up to a generator. However, the suppression system would have been fine. Typically, they are strictly mechanical. There may be micro switches to contactors or shunt trips, but the suppression function usually runs off a fusible link in a tensioned s/s cable.
I think the suppression system is just a can of silly string connected to a solenoid
