I know I saw some sort drawing with dimensional measurements regarding required GFI protection for bathroom exhaust fans. In what proximity to the tub does the fan/light need to be GFI protected?

The GFCI protection is driven by the manufacturer / listing. The NEC does not require GFCI protection for a bathroom exhaust fan.

Every bath fan or bath fan/light that I have seen required GFCI protection if install over a tub or shower.

And, if there is heat involved, the manufacturers recomend that you don't install it within that space.
