I don't like one faulted motor to take out all the rest, but that's just me....

That is one of the trade offs of wanting to put more than one on a circuit, contactor, etc.

Depending on the process, they could be interlocked so that if one goes down it turns them all off anyway.

Maybe. What is the maximum OCPD permitted for the starter and overload? Are all of the parts listed for a "group installation"? 430.53(C).

Find us some motor starters (especially 30 amp or lower) that are not permitted for group installations. (Just because I said that you will)
