In a main lug only panel, why do they include a bonding screw?..Is their certain setups that would need it?...The only senario I can think of if the panel was used in conjunction with the 6 throws rule. Howevere they are 30 and 40 space panels.

Most MLO panels are convertible to main breaker type. I wind up adding a main breaker all the time.

You are correct, and the fact it might be a 40 space panel has nothing to do with only installing six breakers.

Some panels are also convertable so you can remove the jumper bar between the two neutral bars and install the bonding screw in that terminal bar for equipment grounding conductors.
