Can you have FUSED 200A switch feeding load with #8 wire? Doesn't wire need to be rated ampacity to match switch size?

No way for you to know without more input (RFI) or on-site inout BUT as noteds, with a 50 amp wire and 430.122 it's practically impossible that it would meet Code unless it'sa tap to another OCP device and meets 240.21Question is what's the input current. Don't know.
