Is there anything prohibiting class 2 transformers from being paralled together?

It can't be a class 2 circuit anymore if you did that.

725.121 Power Sources for Class 2 and Class 3 Circuits.
(A) Power Source. The power source for a Class 2 or a
Class 3 circuit shall be as specified in 725.121(A)(1), (A)(2),
(A)(3), (A)(4), or (A)(5):

(1) A listed Class 2 or Class 3 transformer

Note the word "A" - singular.
 
More specifically would be 725.121(B)

(B) Interconnection of Power Sources. Class 2 or Class 3 power sources shall not have the output connections paralleled or otherwise interconnected unless listed for such interconnection.

so would this preclude grounding class 2 power supplies since that would inevitably connect the grounded conductors on the class 2 power supplies?
 
Since class 2 are power-limited transformers IMO this prohibition is because the arrangement working or not is not certain, and not so much for safety reasons.
