Commercial oven wire size

Hi,

A local bakery or cake shop actually just purchased a set of the stacked ovens. Forgot the make, but they are basically two separate ovens attached to each other. They were well used.

The data plate on one is readable and has 208V 31A 3PH on it.

The flex tails that were left on it have and had #10 THHN wire in them.

At 31A would these not require a minimum of #8 and a 40A breaker?

Am I missing something or were they not wired correctly before?

I would say minimum of 8 AWG and a 35 amp breaker - but a 40, 45, or 50 may be acceptable since it does not exceed the ampacity of the conductor.
