Commercial Renovation 15,000 Sq. ft. space, new electrical

I am debating what would be a more realistic cost effective method to renovate an office building. I would like to demo all LV panels and install new; however I will need to salvage 75% of receptacles. Do I call for electricians to salvage and trace circuit to panels then disconnect for new install or Demo the entire run and re-install per new design? Materials Vs. Labor?

What do you mean by "salvage 75% of receptacles", physically removing them and reusing them later?

"Salvage" meaning replacing receptacle but keeping the runs to the either J Box or circuit breaker

I do a lot of remodels. 90% of the time the best thing to do is save the home runs and demo everything else in the room at least back to a ceiling j box.
