There is a ton of accessible information online and books that are available.
There are some online courses, some of them are interactive, and online stuff to download that may be of good use for you.

The best book I have found is by American Technical Publishers on Electrical Motor Controls

This books is excellent and starts with how to document motor controls, troubleshoot etc, very little on the NEC, which has some rules on motor control.
Mike Holt has material on motor controls but it was old and out of date, he has been working on updating it but don't know status.
