So I feel so dense I still don't understand the code compliant answer to this simple question.

If I have wto wire old knob and tube Outlet
And I just want to replace that outlet

I can either replace it with a two prong or

replace it with a GFI protected line to the 3prong or
?

can I also grab the cold water pipe, some emt - the nearest cold water pipe or is it only within 5 feet of the entrance

Thx for your forbearance

There was a time a few a few Codes ago where you could use a water pipe. Now refer to 250.130 or 406.3(D)

Let me add that the bit about 5 feet and water pipes has to do with using the water pipe as a grounding electrode. You have to make the connection within five feet of where the pipe enters the building. That is so that a person doing work on the pipe would be able to see that there is a wire attached.

Along those lines I was just at an old installation and saw the gas was bonded to the water entrance.
I would've preferred to have gone all the way to the main, but bonding the gas to the water at the main is acceptable.
