What do you do with the aluminum ground in the hospital grade mc cable at the panel end?

Nothing, that aluminum strip is only meant to reduce the impedance of the mc cable. Just cut it off.

I agree, cut it off at every termination not just the panel end. I've seen guys connecting it to receptacles and switches when using MC-ap.
