Disconnection of commercial electric fry stations

I am replacing a two station commercial electric fryer with a new three station electric fryer. The old uinit is direct wireded with no disconnect means other than the two circuit breakers which is are out of sight.
Where in the code can I find information regarding the disconnecting of hard wired units.
I feel that I need visable disconnects whether it is cord & plugs or non fusable disconnects
Any advice.
 
A commercial electric fryer would be an electric appliance and need to have a disconnect. Take a look at 422.30, 422.31(B), and 422.34.

Having seen those horror pictures of guys trying to use those turkey fryers it would be crazy not to have a disconnect close at hand, as well as a fire extinguisher.:wink:
