Fan Power Box & J-Box

Just curious, would a j-box be need here even though they shown it? or would you just wire to the motor rated toggle and whip to the unit? Thanks.

I would put in a J-box and install the switch in it. A J-box would be needed to continue the circuit to other fans on that circuit

Those thermal F type switches come with a box.

For us many times the mechanical contractor proves the correct thermal switch/box (just like they supply VFD's and motor starters) along with the proper heaters. It may even come installed on the equipment.
