Flexable cord for fixed appliances

I am looking for some help on whether I can use an S O cord to connect a drop in hot well in a restaurant, or if it must be hard wired. I looked in art 422, but I may be on the wrong track. I was told once that fixed appliances that do not come with cords are not designed to be cord and plug connected. I don't think this can always apply, but I would appreciate your input!!! Thank you! Bob

Only if it is listed in the UL listed instructions that came with the appliance can it be installed as a plug in appliance. Like a range they can be hard wired or cord and plug connected.
