If steel channel can adequately support the weight, and the FMC is secured per 348.30 to the channel, can multiple FMC raceway be stacked in a pile?

I don't see why not. It wouldn't be much different than piling up a bunch of MC.

What amount of derating?
310.15(B)(3)(b) says to maintain spacing between raceway, but what if it isn't maintained?
310.15(B)(3)(a)(4) says I can bundle AC and MC as long as I have #12's, etc.
