Does the Code give us latitude to modify any part of electrical components, fittings or devices? Is anyone in this trade NOT guilty of doing this at times, in order to "make something fit" ?

I wouldn't say I'm guilty because I've done nothing wrong. The code does make a distinction between listed, identified, and accepted. Sometimes you have to get into the UL whitebook to get some clarity on what something is listed for, but not everything we use is listed.
