What classification is the canopy at fueling stations? Are these typically treated as classified areas as well?

Yes for the unleaded, fuel. See NFPA 30A and NEC article 514.

Are you referring specifically to the roof and/or ceiling of the canopy or the whole dispensing area under the canopy? I believe the canopy roof should be unclassified per table 514.3(B)(1). Meaning the Class1 Divisions 1 and 2 areas end more than 18" above the dispensers and 20' horizontal from the dispenser enclosures. Found this on Google:
