What 2023 NEC code covers if you need or don't need a GFIC for a Lab Bench? Are there any requirements at all when it comes to lab benches?

Don't think so. What drives receptacle GFCI requirements is its location. Being part of a lab bench itself doesn't drive the requirement. If that bench receptacle is close to a sink, outside, or other places where GFCI is needed, then you need the GFCI on the affected receptacles.

For a lab bench, the 2023 NEC generally requires GFCI protection only if the bench is in a wet or potentially wet location. So, whether a GFCI is needed depends on the risk of exposure to liquids at the bench.
