Can you Make the main breaker GFCI protected for a sub panel for a attacted addition for a indoor pool. Everthing in the addition has to be gfci by code pumps,lighting, receptecals, garage, hot tub. So insted of using all individual gfci breakers can I just use 1 for the 100 amp main at the Main 200 amp service inside the house.

In theory I believe you are correct, however,,,

I have only seen a Siemens 50amp GFCI and a J&J GFCI load center go only as high as 60 amps..

Have you found a GFCI 100amp breaker?
 
Sounds like it would work (who makes a 2p 100a gfci cb?) but I question the practicality. I wouldn't want the hole building to go dark if a pump had a problem or a recept. outlet had a bad load plugged in.
 
Most GFCI breakers above 50A do not have provisions for load side neutrals, they can only feed 240V loads.

So in theory GFCI protected is GFCI protected, it just may not be possible to find the equipment.
 
One issue with using a "main" GFCI is the leakage current on all of the circuits and equipment. It could very well exceed the ~5mA trip current of a Class A GFCI.
