Where in the code does it say if you hard wire you don’t need to have a Gfci. I have 208 oven that I hope I can hard wire.
 
210.8(A) or (B), depending on whether this is a dwelling unit. In either case, the code calls for GFCI for "receptacles," not in the more general context of "outlets." A hard wired connection would involve an outlet, but not a receptacle outlet. So no GFCI would be needed.

Whether or not it can be hardwired is up to the manufacturer. Many wall ovens can only be hardwired.
