Where in the code does it say if you hard wire you don’t need to have a Gfci. I have 208 oven that I hope I can hard wire.

If its a commercial kitchen you won't find it.

210.8(A) or (B), depending on whether this is a dwelling unit. In either case, the code calls for GFCI for "receptacles," not in the more general context of "outlets." A hard wired connection would involve an outlet, but not a receptacle outlet. So no GFCI would be needed.

This distinction can be found in some code cycle versions regarding swimming pool motor connections. Old versions...........

Whether or not it can be hardwired is up to the manufacturer. Many wall ovens can only be hardwired.
