Hard wired coffee brewers

I know it's late. Working on a late night estimate for a customer with a larger commercial kitchen.
They are installing two giant coffee brewers. 50 amp, 120/208 units. Manufacturers specs say "must be hard wired - cannot be connected to a standard wall outlet", and includes a picture of a 120 volt outlet with the standard circle and line crossing it out. Obviously it can't connect to a "standard" wall outlet, but does the hive mind think I would be okay with an appropriate outlet? Or does the "must be hard wired" part of the instructions preclude that? I'm thinking it does.
So my bigger question is - if it's hard wired I would assume I have to put in disconnect switches at the location. But the health department like as little stuff on the wall surfaces as possible for cleaning. All circuits so far are inside the walls with flush mounted outlets. Not sure they will like a surface mounted disconnect in the prep area where these will be.
Could I possibly get by with circuit breaker lockout brackets like we often use on water heaters?

I agree with green tagger..if you are estimating it just add a few bucks for a breaker lock in case it does not have an integral disconnect.

Or as an estimator just add $300 for a disconnect and let the question be answered IF you get the job.
