How much more load can it take

I'm looking for a code reference, a formula, or some type of calculation
to help me determine how much more load can I add to a panelboard.
Lets just say it was a 400 amp 480 volt 3 phase that had a 100 amp breaker feeding a 75 kva transformer which in turn feeds a 120/208 panel board with receptacles.
 
I assume you're talking about the secondary fed panelboard? Does it have an OCPD protecting the secondary conductors?

75000/208*1.73=208.4 amps
