How should this REALLY be wired?

I have had some unexpected work done on my electrical that I am concerned about. I have a main service box at 150 amps with its own breaker. I have a sub-panel in my house that is wired w/ 2 AWG from the main service panel to the indoor panel which used to have a 100 amp breaker. Now the sub-panel has been upgraded with a 125 AMP breaker, but the 2 AWG wire remains. Is this safe/correct? If not, how do I know whether I should replace the 125 AMP breaker back to the original 100 Amp breaker or have the whole thing rewired with a different gauge wire and keep the 125 AMP breaker?

I can tell you that I have the following circuits attached to the sub-panel:

Central Air- 3.5 ton, 11 SEER (2-poled 50 amp)
Stove/Range (2-poled 60 amp)
Tankless Water Heater (two single poled 50 amp)
Air conditioning wall unit (20 amp)
Refrigerator (20 amp)
Dishwasher (20 amp)
Microwave-Range Hood Combo (20 amp)
2 - small kitchen appliance circuits (20 amp)

and 7 circuits, a mix of 15 amp and 20 amp, to handle lighting and receptacles inside and outside of the house (which seems like an awful lot to me), which includes 2 bedrooms, 1 bath, kitchen (lights only), dining room and small family room, probably about 1100 sq. feet, if that.

Please let me know if 2 awg wire is sufficient for 125 amp breaker, and if not whether I need to call yet another electrician to replace the wire (and conduit, I am sure)OR if I can replace the 125 amp breaker with a 100 amp breaker and be okay.
