I installed a phase converter many many years ago. For the time it wasn't that expensive and we never had an issue with it. Make sure it is sized properly. I would also check with the manufacturer of the machine and see if there are options
 
The restaurant customer I have is good at shooting me a nameplate rating and the plug for it, before he requests a quote. He was a regional manager for a large chain restaurant business before he got his own. Never balks at the price.
 
So far so good with our phoenix brand phase converter..hand built controls and a digital output readout. The control ships from phoenix and his motors ships from vegas fwiw..
