Interpretation of Wiring Method

We have a 66 x 36 single story wooden frame building designed for use at a miniature golf course. The building will contain two lav's an office, storage room, & sales room. The cielings are drywall with no attic access. Would nonmetallic cable be an acceptable wiring method?

Since the structure itself is not required to be a rated assembly, the short answer would be yes it can be wired with non-metallic sheathed cable. Article 334.10 will require that the cable be protected with a 15-minute finsh rating (1/2" gypsum wallboard) or greater.
