This is what I was referring to in my original post. Any good resources to help me learn this?

The wiring is different: (3) 2-pole, 2-wire circuits vs. (1) 3-pole, 3-wire circuit... although there is nothing to prevent this from becoming (3) 2-wire circuits.

Each fixture is a one-phase load tap of a three-phase circuit (AB, BC, or CA).

Typical circuits use all the same fixtures. Most a circuit will be out of balance is +/- one fixture. Balance loads... as best possible. Use fixture VA to calculate load/amps. Use fixture VA of nearest greater multiple of 3 to ascertain ampacity and protection ratings.
