Lighting wiring conductor size

Are the lights plug into receptacles? if yes what is the rating for these receptacles?
No the company has not provided me with details on the lights Wattage they want to use. So far I have only made emt runs with 4 square boxes with 1/2 inch knockouts. My next goal is to try to figure out what size conductors to pull for lighting either #14 - 10 awg

You don’t need the lights wattage, you need the lights fixtures wattage. You are required to wire IAW the light fixtures wattage, not the lights/bulbs wattage. I.e recess can lights is 60/100w moguls base you can use led 9 w but for calculations, you have to use 60/100w per light to size you cables.
 
I don’t know what the previous lamps were rated or wattage used since this is being done to an old ball-mill Building from the 1920-50s with known and tube. (At a mine)
I agree with Engser18, you go off the maximum VA for which the fixture is rated;
Technically, it is base on light fixtures rating not the bulbs, the bulbs shall be rated lesser than or equal fixtures rated. See 220.14 (D)
My guess is each fixture would be rated around 750 or 1000W, but you'll need to check
