Does make up air unit supply fan for kitchen hood application usually typically have or can have hermetic refrigerant motor compress or not? Anyone familiar with commercial kitchen hood install? Currently commercial site has rooftop unit as well and they are installing supply dan make up air unit

MAUs can come as plain air handlers, air handlers with heat capability and one with hermetic compressors.
The vast majory of the ones I have seen for kitchen hood use are simply fan motors w/o heating or cooling but that may not be the cae in other areas of the country.

Sometimes the make up air can be supplied by the regular HVAC unit(s).

More to your point, if the MUA requires conditioning (heating and/or cooling) there are units that will do that that contain an A/C compressor and system for cooling and possibly some method to heat the air depending on the climate.

To answer your next question, the electrical requirements are listed on the tag on the unit exactly like any A/C unit and gets wired the same way.

If no conditioning of the MUA is required all that is installed is a rooftop blower.
