metal studs/mc cable

I think they typically use drywall screws.

Unless the studs are light weight these ones are popular here and I know for a fact you can zip them into EMT or a 4" sq blank cover easily. :D

Typically, on commercial jobs I've worked on, only 2x4s are the lighrweight. Heavyweights are usually 2x6 or wider.
 
300.4(A) is for cables through bored holes in wood members.

Your right, 300.4(A) does not apply to MC cable run through metal framing members.

You just can't run the MC cable parallel to the metal stud at a distance less than 1-1/4 from the nearest edge without protection.;)

Yup, so just install a Colorado Jim or similar strap and you're good to go. No metal plates required.
