I use them to check bearing temperatures, not the whole motor. Previous recorded temperatures would help track a trend. You would need to keep track of ambient temp, bearing temp, current draw and other pertinent information. Full sun in the summer would naturally be different than a cloudy Minnesota winter night.
 
Would taking temp. readings on outside motors be a waste of time with those point and shoot meters since the temp. outside changes ?
I agree with ptonsparky.
You need to record ambient as well as motor temperature.
And keep records so that you can check trends.

the temperature rise of a motor is generally independent of ambient, that is to say if a motor has a 40 degree rise it will be 80 degrees in an 40 degree area and 60 degrees in a 20 degree area. I would keep track of the temperature difference between ambient and the motor. Also a infrared camera or thermal imaging may be a good investment to consider.
