Motor Starter Interlock - Wiring to SCADA system?

An existing motor bucket currently has a NC level switch in series with it motor starter. In case of a high level, the level switch would open preventing the motor to run.

We would like to pull the status of this of level switch to a local PLC for remote monitoring. Any recommendations on the best means to perform this? Could I run the level switch to an aux contact and then break out from there back to the motor starter circuit and PLC?

Depends on your control system but no reason you can't pull a signal out of your motor circuit. Might need to take the switch signal into a relay to
make a set of dry contacts and then use that for your signal output.
 
Did you check to see if the level switch is a form C? If it is you could use the NO for your status. You would be using the same voltage that is interrupting the starter so make sure the PLC input can handle it or use a relay to isolate it. You might also want to see if the level switch has an extra set of form C contacts that can be used as dry contacts for your application.
