What NEC article best addresses the requirement for listed connectors or fittings to protect type NM cable entering metal enclosures, especially appliances ?

Look on the article regarding NM cable. I'm pretty sure that early in the article there is a paragraph requiring fittings be listed.

"Fittings and connectors shall be used only with the specific wiring methods for which they are designed and listed."

And nothing in 334 directly answers OP question. That makes you go further back to more "general" articles such as 300 where I did find what I quoted, and 110, where you most likely come to conclusion you follow 110.3(B) and the answer is in product instructions more so than in NEC.
