Have 3 existing panels being replaced in same exact location with 3 new panels . Panels are same size and they are asking for the feeders to be disconnected and reconnected. My questions…
1. Would you just remove the conduit back to the coupling?
2. Should be no need to splice and have to extend wires? Assuming main breaker in same location and dims of new panel are same?

All branch circuits are being demoed.

Yes maybe just swapping the interiors might be an option but I'm sure they'll say "we paid for new panel".
Explain the cost savings.
So loosen the connector and pull the conduit out?
Remove all branch circuits from the enclosure.
Remove the interior.
Lift the enclosure from the conduit that feeds it.

Reverse the procedure.

Or, swap the interiors if the existing enclosure is in good condition.
 
The killer comes when your old panels have conduits entering from more than one side.
Do you know the arrangement of the existing panels as far as conduit entries ??
