Wood frame can generally be wired with NM cable assuming compliance with other NEC rules (not permitted above dropped ceiling, exposed, etc.) Check the building classification.
 
If it counts as a Article 518 "Assembly Occupancies" you're limited to what's in 518.4, which may or may not allow NM/NMC.
Very good, while in the building code an assembly is 50 in the electrical code it's 100. my guess is if it's a gym it'll be 100 and then you can't use Romex. Also if it is classified by the building department as an "A" occupancy there may be some rated walls that come into play unless it's a stand alone building.
